Country Barn Farm does not sell pasteurized honey. We are not aware of anyone who does, except for honey that is irradiated for FDA approved medical use.
Commercial honey packers will heat honey to kill any yeast that may be present to improve self life, but this is not true pasteurization. Honey should not be fed to infants under one year of age due to the possibility of botulism poisoning due to botulism spores that may be in the honey. This is true of any raw food.
We do not heat the honey or filter heavily so it is as natural as possible, but it is as safe for consumption as any other honey on the market.
You may be thinking of creamed or crystallized honey. Creamed honey is produced with fine crystals so it is spreadable.
All honey will crystallize eventually. Unheated, unfiltered honey will crystallize faster than filtered, heated honey. Crystallized honey can be liquified by placing the jar in a pot of warm water. Do not boil. Loosen the lid to prevent pressure from building up in the jar and don’t allow water to contact the honey.

Country Barn Farm produces a wildflower honey that is unique to our location and the season it is harvested. Regions with large areas of single variety nectar sources may produce varietal honey that is derived from a single variety of nectar in a concentration greater than 85% in the final product.
